What is your favorite ingredient to cook with in the summer?

Whatever is fresh or local. For example, corn, basil and squash. I try to utilize all of Michigan's best summer produce.

What ingredient can you not live without?  

Butter. Butter works well with all flavors, as spices dissolve into the butter carrying flavors throughout the dish. 

What do you like most about DYC?

The adrenaline in the kitchen.  Something is always going on. It is very busy and fast paced, and you have to think on your feet, especially during the summer.
